The “Lucky” time of the year is almost here.  St. Patricks Day is almost here and if you celebrate this holiday you might enjoy a couple fun recipes.  A couple years back I had my first ever Irish Soda Bread and it was delish! I always wanted to make it myself but haven’t had the time. Now I am more at home I can treat myself with a little something now and then. Besides the soda bread there is so much delicious food you can make to celebrate this fun holiday. Here I share this six recipes for a great St. Patricks Day party!

Irish Soda Bread

by Tide & Thyme

  • 4 cups all-purpose flour, plus extra for raisins
  • 4 tablespoons sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons kosher salt
  • 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch slices
  • 1 3/4 cups cold buttermilk, shaken
  • 1 extra-large egg, lightly beaten
  • 1 teaspoon grated orange zest
  • 1 Tbsp caraway seeds
  • 1 cup raisins or dried currants

Reuben Dip

  • 1 lb. diced corned beef
  • 8 oz. shredded swiss cheese
  • 1 14-oz. can sauerkraut, drained very well (place in strainer & press out liquid)
  • 3/4 c. mayonnaise
  • 1/4 c. Thousand Island dressing
  • salt and pepper, to taste

Loaded Sweet Potato Irish Nachos with Beer-Braised Short Ribs

Ingredients:
For the short ribs:

  • 2 pounds boneless beef short ribs
  • 1½ tablespoons olive oil, divided
  • ½ yellow onion, minced
  • 2 cloves garlic, minced
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 2 tablespoon Cholula or hot sauce of your choice
  • 12 ounces beer of your choice (I used Coors Light because that’s what I had in my fridge, but anything on the lighter side will do. Do NOT use an IPA, or your sauce will be very bitter.)
  • 1 cup tomato puree/sauce

For the sweet potatoes:

  • 3 medium sweet potatoes
  • 2 tablespoons olive oil
  • ¾ teaspoon ground cumin
  • 1¾ teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • For the nachos:
  • ½ cup pickled jalapenos
  • 1¼ cup shredded cheddar or Mexican blend cheese
  • 1 cup guacamole or diced avocado
  • 1 small red bell pepper, diced
  • ¼ large red onion, minced
  • ¼ cup fresh cilantro, chopped

    For the cupcakes

    • 1 1/4 cups all purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 1/2 cup cream cheese, room temperature
    • 5 tablespoons butter, room temperature
    • 1/2 cup sugar
    • 1/2 cup light brown sugar
    • 1/2 teaspoon pure vanilla extract or paste
    • 2 eggs
    • 1/2 cup Baileys Irish Cream

    For the filling

    • 2/3 cup heavy whipping cream
    • 1 cup white chocolate chips
    • 2 tablespoon butter
    • 3 teaspoons Jameson Irish Whiskey

    For the frosting

    • 1 cup Guinness Extra Stout beer
    • 1/2 cup Ghirardelli 60% Cocoa baking chips
    • 3/4 cup vegetable shortening
    • 1/4 cup Hershey’s Special Dark cocoa
    • 4 cups powdered sugar
    • 1/2 teaspoon pure vanilla extract or paste
    • 4-5 tablespoons milk
